This cut is similar to the flank steak but with more flavorful marbling. In our house, slices of this cut rarely make it to the plate from the cutting board! Best if marinated and grilled hot & fast, sliced across the grain in strips, and served medium-rare. Skirt is great for making Carne Asada, fajitas & tacos!
