The fantastic marbling & the rich marrow center of shank results in the most delicious cut of beef. After a few hours of braising, our 21-day dry aged shank will be melt-off-the-bone tender and full of decadent beefy richness. Serve your favorite Osso Buco recipe over polenta or mashed potatoes or use a shank in your soups & stews to bump up the beefy richness. Shanks are cross cut (Osso Buco style) to about 2” thick.
